It was located under the freeway, next to a drive-in theater that was supposedly haunted.<br />

We didn't go often but when we did, I'd always order the same thing. They called it the Teri Beef Queen. Beef teriyaki, grilled onions, american cheese and mayo on a hamburger bun. Brings back memories!<br />
<br />
The place is gone now, turned into a Zippy's (another Hawaiian food institution). The drive-in theater is now a driving range.. or has it moved to something else? At any rate, it's gone. My taste for nostalgia is not.<br />
<br />
Teri Beef Queen<br />
<br />
Thin sliced beef*<br />
<br />
Teriyaki Marinade<br />
1 part shoyu (soy sauce) i used 1/2 cup<br />
1 part sugar<br />
2 or 3 cloves of garlic, crushed, minced or pressed<br />
1 piece of ginger, aprox 1" x 1" x 1" (don't have to be exact), peeled and minced, grated or smashed<br />

Mix all marinade ingredients. Add to beef and mix well. Refrigerate for at least 3 hours or over night. Occasionally stirring or flipping the zip bag over if you put it in one. Heat a frying pan on high with a little oil. Fry beef slices briefly, a minute per side or less. Don't over cook. You can also throw this on a BBQ grill.<br />

That is my standard teriyaki recipe. Use it to marinade chicken or pork too. I sometimes boil it down by half (watch it carefully it boils over easily), then cool it. It gets thick and i can use it on burgers or brush it on chicken and steaks. My favorite is to add the thick sauce to raw hamburger with green onions and make patties. Teri burgers (or meatloaf) that have the taste in every bite! We have yet to find a good Asian restaurant around here. Coming from Hawaii, I'm really picky about Asian food. I'm Japanese/Filipino and The Ex is full Chinese so we know authentic. Hawaii also has a few things that we can't find anywhere else.<br />
<br />
One of those is Cake Noodle. You can get it in almost any Chinese Restaurant in the Islands. Basically you take boiled thin chow mien noodles and fry them in a frying pan or a wok until they are crispy on one side (like hash browns) then flip them over and do the other side. Put them on a plate and cut in to squares or cakes. They are so good but you need to use a lot of oil to get the right texture. Or so I thought.<br />

I was already to make them the other night as a treat for the boys. I even had the noodles boiled and waiting, when I was catching up on blogs and saw a healthier way to make them. <a href="http://www.tinyurbankitchen.com/2011/06/garlic-chicken-with-golden-noodles.html">Tiny Urban Kitchen</a> had a recipe that called for putting them under the broiler instead. Go visit her, she's got a give away going!<br />

Pork Stir fry<br />
1- 1 1/2 lbs of pork (I use country style ribs, sliced thin)<br />
2 T oyster sauce<br />
2 Tsp sugar<br />
1 T Shoyu<br />
2 T. cornstarch<br />
1 Tsp Garlic powder or 1 garlic clove, minced<br />

Cut up veggies, I used onion garlic, broccoli, cauliflower, canned water chestnuts and bamboo shoots.<br />
1/4c oyster sauce<br />
2 tsp sugar<br />
2 T Shoyu<br />
1/2 tsp sesame oil<br />

Mix pork and the next 5 ingredients in a mixing bowl. Let stand for 15 min. Heat some oil in a wok or big pot till very hot. Put pork in and stir fry until mostly done. Put back in the bowl and set aside.<br />

Add a little more oil to the pan (or stir fry in a little water). Throw the fresh veggies in and stir fry until almost soft crisp. Add the oyster sauce, sugar and soy sauce and mix well. Put the pork back in with the veggies and add a cup of water. Add the canned veggies and heat through.<br />

The gravy should thicken up. If it gets too thick then add a bit more water, if not thick enough you can mix some cornstarch with water and add it. Take off the heat and add the sesame oil. Mix well.<br />

Thai Curry Chicken<br />
<br />
1 T Oil<br />
1/4 c Thai curry paste (I like either red or masman), more if you like it hotter<br />
6-8 chicken thighs<br />
2 T brown sugar<br />
2T fish sauce<br />

Heat oil in a heavy pot and add the curry paste. Saute until bubbly. Add chicken thighs, brown sugar, fish sauce and coconut milk. Bring to a boil and cover. Reduce heat to a low boil. Cook for at least 45 min, stirring once about midway. If you like the sauce a little thicker, boil with the cover off for a few minutes.<br />

They have the greatest specials on meat. We like to buy something called Bistec Para Asar, when it comes on sale.<br />

I've tried to find out what it is. I know it's beef but not sure what cut. Someone said round steak. Another source said rib eye. Whatever it is we love it.<br />
<br />
Bistec para asar is sliced really thin, a quarter inch or less. This makes for fast cooking on those busy nights.<br />
<br />
Marinated Bistec Para Asar<br />
<br />
1/2 c lime juice<br />
1 tsp salt<br />
1 tsp sugar<br />
2 garlic cloves, minced or pressed<br />
half a small onion, minced or grated<br />
1/2 tsp cayenne pepper (opt, more or less to taste)<br />
1/4 c chopped cilantro<br />
1/4 c oil ( I use good olive oil)<br />
<br />
2 lbs bistec para asar (or thin sliced sandwich steaks, or any beef)<br />
<br />
Mix all together and pour over the beef. Let marinate at least 3 hours or overnight. Quickly pan sear or throw on the grill.<br />
<br />
If I pan sear, I like to deglaze the pan with a Tablespoon or two of vermouth and pour on the meat.<br />
<br />
I slice the meat into thin strips. Easiest way is to stack 3 or 4 and roll them then slice.<br />

Coconut Spanish Rice<br />

I cook this in my rice pot. I also use brown basmati, which needs more liquid than most other rice. I think you can use whatever you normally do. Adjust the liquid ingredients to make up the usual amount of water or broth that you use.<br />
<br />
Coconut Milk (canned)<br />
Canned diced tomatoes<br />
Crushed garlic clove or garlic powder<br />
Chili Powder<br />
Salt<br />
<br />
(I used 1 can coconut milk, 1 28oz can petite diced tomato, 2 tsp garlic powder, 1 tsp salt, 1 T chili powder and 2 cups of raw brown basmati rice plus water to make 4 c of liquid total)<br />
<br />
Drain the liquid from the tomatoes into a measuring cup. Add a can of coconut milk until the right amount of liquid is acheived. You can add water if you need more. Mix liquid with rice, garlic, salt and the drained tomatoes. Cook as normal, either on the stove or in a rice cooker. Mix well before serving.<br />

I need my meat. I crave very rare steaks and hearty stews. I've been making this dish for years. I prefer thick short ribs but chuck roast works well too. <br />

Oven Braised Short Ribs<br />
<br />
3 lbs Short ribs cut between the bones (or large chunks of chuck roast)<br />
2 T Flour<br />
28 oz can of diced tomatoes ( I use 2 cans for more gravy)<br />
1 Onion, sliced<br />
2-3 cloves garlic, crushed or minced<br />
2 bay leaves<br />
2 tsp dry oregano<br />
1 tsp red pepper flakes (opt)<br />
<br />
Mix flour with salt and pepper if you like then dredge the meat in it. Heat a little oil in a hot skillet (or dutch oven that can go in the oven). Brown the meat on all sides. (If I'm lazy, I skip this step and just throw it raw into the baking pan.<br />
<br />
Put meat in a baking pan, casserole dish or dutch oven. Scatter onions, garlic, bay leaves, red pepper and oregano over the top. Pour the tomatoes on top and spread evenly over the beef. Add Salt and pepper to taste. You can even add a splash of red wine. <br />

Put the lid on or cover tightly with foil. Bake in a 400 degree oven for 3 hours. You can serve as is or drain the liquid into a sauce pan and thicken with a cornstarch and water mixture. Pour back over the meat. I serve this with rice but pasta or mashed potatoes work well too.<br />

I've spent so much time at home the last three weeks that any chance to get out of the house is a treat for me.<br />

We were getting low on supplies, especially sandwich stuff. The Greek could live on sandwiches, he likes them that much. So we hopped in the car and went shopping at some of our favorite places.<br />
<br />
We stopped at the neighborhood grocery store to pick up a couple of things but also at two of our favorite specialty shops.<br />
<br />
The first one is a fresh market. There is one we go to about 20 min from home across the state line in Illinois that is mostly filipino, but this one is predominantly hispanic. They always have great deals on meat and produce. This week is was chicken leg quarters for 59 cents a lb (they go as low as 39 cents a pound sometimes). A couple of weeks ago we got some pork rib tips for 99 cents a pound, they were nearly boneless and so good! We buy in bulk and fill up the chest freezer.<br />

Produce is so cheap and fresh. Eggplant for 69 cents a lb, green onions 4 bunches for $1, and 5lb bags of Vidalia onions for 99 cents!<br />

They also have The Greek's Dietz and Watson Hot Pepper Buffalo Wing Sauce Cheddar for $2 less than any of the other grocery stores in the area. We also get the best corn tortillas here that come from Chicago.<br />
<br />
After we finished there, we drove down the street two or three blocks and went to Tenuta's Italian Deli. <br />
<br />
Tenuta's has been in business over 60 years. When you first enter they have pictures up of all the famous people who have visited there. If it's Italian, they have it. We buy our favorite olive oil from here. It was recommended to us by one of the owners. They have all kinds of canned goods, spices, pasta - both dried and fresh, a variety of olives. They have a bakery the serves up cakes, cookies and cannoli and a case of homemade meatballs, pasta, I even saw pastitsio this last visit.<br />
<br />
They have bags of candies, licorice, nuts, dried fruit and chocolates. The Greek's favorite wine is often buy one get one free along with a wide variety of others. <br />
<br />
The main reason we go is for this.<br />

The deli (remember sandwiches?) is filled with salads and olives and peppers. The cheese case is extensive. I love their fresh mozzerella and smoked string cheese. We stock up on Volpi Genoa Salami, Hot Capicolla, Prociutto, Pancetta, Corned Beef and House-made Roast Beef! As soon as we get home, The Greek makes a sandwich. Listen to him and you'll believe he died and went to heaven!<br />

I've been feeling sorry for myself so indulging in all my favorite things the last couple of weeks. <br />

The Greek took me out to lunch recently. He was in the mood for Mexican food. La Hacienda has a daily lunch buffet, as does their sister restaurant, El Sarape. We prefer La Hacienda. The menu is basically the same at both but the cook at La Hacienda's seasons slightly better.<br />
<br />
I'm still working on remembering to take pictures so didn't get any of the buffet. By the time I took the camera out, lunch was in full swing and the buffet lines were busy.<br />

</tbody></table>They typically have the basics. Ground beef for tacos, beef fajitas, one or two kinds of enchiladas, soup, beans, rice, nacho cheese sauce. They also have a whole condiment bar with limes, cilantro, chopped onions, sour cream as well as three different kinds of salsa. <br />

They have hard taco shells and deep fried flour tortilla "bowls" to make a salad in. You can also request hot flour or corn tortillas.<br />
<br />
The day we went the special was BBQ pork ribs in chipotle sauce. They were melt in your mouth, fall off the bone tender. The Greek loved them and thought they were the best thing that he's ever eaten there.<br />
<br />
Now I adore Mexican food. Give me some carnitas, al pastor or adobada. I'm also a fan of coctel de camarones and menudo. So what's my favorite thing from this buffet?<br />

I know! It's not real Mexican food but hey what can I say? I like what I like! The chicken fingers are all breast meat and dipped in a batter that has flecks of jalapenos in it, then deep fried. So bad for you but so good! I love them dipped in salsa or wrapped in a corn tortilla with cilantro, chopped onions, salsa and a squeeze of lime.<br />
<br />
The fruit chimis are flour tortillas filled with either apple or peach (apples on this day) and fried then coated with a little bit of honey and cinnamon sugar. You HAVE to have whipped cream on top, there is a can right on the buffet table. Warm sweet and gooey comfort food!<br />

This is not a place I could eat at often but 2 or 3 times a year, it makes for a nice treat for us. They don't sell this in the US, I haven't found it in any store nor is it on their US website. I tried this on chicken wings recently and I'm hooked! Whenever I make a turkey I make sure to make a huge pan (or two) of stuffing. My boys and I both love homemade stuffing. I guess some people call it dressing, but it's the side dish made of bread that one can stuff into a chicken or turkey. <br />
<br />
Last time I made stuffing I froze some in a zip bag and threw it in the freezer. Now that we're hoping to sell the house soon, we've been clearing out said freezer and this week I pulled that bag back out.<br />
<br />
It was time for my favorite leftover recipe.<br />
<br />
Stuffing Patties<br />
Leftover bread stuffing (dressing)<br />
Egg (optional)<br />
<br />
If your stuffing is moist enough to hold together in a patty, you don't need to add the egg. If it is too dry then add that egg to it. Form it into patties. I make mine about 3 or 4 inches across. Heat a frying pan on med-hi with either oil (better tasting) or non stick spray (better for you). When the pan is hot, place the patties in and fry on each side until brown. I like mine a little longer so that they are really crispy. <br />

Last week the local fresh market had a special on pork rib tips for a buck a pound. I sent The Greek out to pick up five pounds worth. <br />

Last night I made a dry rub and put them in the Crockpot. I covered them in BBQ sauce and popped them in the oven to finish them off. They were fall off the bone tender and meaty. There really weren't that many bones in it at all. It was a great deal. Cheaper and easier than the spareribs I made a couple weeks ago.<br />

Crock Pot Rib Tips<br />
<br />
Dry Rub ( I use this on ribs, pork and chicken too)<br />
<br />
2 T of salt (I used coarse Hawaiian sea salt but have done it with regular salt too)<br />
1/2 c sugar<br />
1/4 cup chili powder (or a mix of chili powder and paprika)<br />
2 T granulated garlic or garlic powder<br />
2 T dry oregano<br />

Rub all over the ribs. Place ribs in the crock pot on low for 8-10 hours.<br />

After that time you can take them out and baste them with your favorite BBQ sauce and either throw them in a 400 degree oven for 20-30 min or char them a bit on a grill.<br />

I have used this rub all the time and then placed the meat straight in the oven. Chicken thighs work well as does country style pork ribs. Of course you will have to cook them a bit longer than if you put them in the Crockpot first but they are tasty, even without adding any more sauce.<br />

It took me close to 3 years to find this place which is funny because we pass it multiple times a week and never really gave it a thought. So for those you don't know what "Bahn Mi" is, it's basically a sub, a sandwich, or more specifically a Vietnamese sub. The bread is generally made in-house and is toasty warm. The filling varies depending on location, the one I got was a lemongrass chicken. Vietnam Village also does a Satay Beef and a Cold Cut sub. Whatever kind it is it's always got fresh crisp toppings including a sweet pickled veggie mixture usually containing carrot & daikon. On top of that this sandwich had spears of fresh crunchy cucumber and a nice serving of cilantro to finish it off.<br />

My mother-in-law is not the adventurous foodie type but she tried their fried spring roll and to my surprise actually enjoyed it! I didn't think she would since these had "weird" ingredients in it, including taro root, but I didn't bother mentioning that until after she ate it and said it was one of the best ones she's ever had.<br />

</tbody></table>To finish off the meal I got a Bubble Tea as well. They've become quite popular in the last few years and the flavors range from the usual strawberry and pineapple to durian fruit and avocado. The small black things at the bottom of the drink are chewy tapioca balls. Occasionally they're made of jelly and they don't really have much flavor of their own. I love the texture of these tapioca balls and you generally for 2-3 in your mouth with every sip. I think I enjoy the fun of it more than anything else! Everything we tried was fresh and fantastic which is saying a lot in this area from my experience. The price wasn't bad either. The subs were $5.00 each which I think is totally worth it! One thing I initiated a couple months ago was a "bedtime" snack. We had read somewhere that if we ate at night to make it a complex carb and it would also help to induce sleep. I settled on oatmeal.<br />

Up until then oatmeal was only something I enjoyed in baked goods. I will not eat regular oatmeal. It's consistency is unappealing to me. Mushy, sticky and slimy. Oh like bananas! I don't touch those either. For me, it has to be steel cut and not instant either.<br />

</tbody></table>I do them in my rice cooker. I make a cups worth and it lasts me 4 nights. I feed it to the kids when they are here too. It's become our ritual a couple hours before bed. This is my usual recipe.<br />

1 cup regular steel cut oats (I prefer McCann's)<br />
3 1/3 cup water<br />
1 tsp salt<br />

I mix it all in the pot and then set it to porridge and forget it. You could also make it in a crock pot or on the stove the internet has many instructions on how to do this. <br />

I use less water than the instructions call for as I like mine with some substance and like the feel of the intact kernels of oats. This smells heavenly when it's cooking.<br />

Stir well when done. You can refrigerate it for later use.<br />

I take serving and pour some milk over it (I like almond milk or coconut milk but anything is good). Microwave it for 90 sec and then stir until creamy, adding more milk if needed. <br />

My go to is unsweetened shredded coconut, sliced almonds, brown sugar and a Tb of dark chocolate chips. I have a bowl nearly every night. I had stopped losing weight and when I started doing this, the scale started moving again. My daughter said it happened for her too.<br />

Now my boys like it better savory than sweet. I make a separate batch with just salt and chicken broth. I serve it with minced green onions, minced salted radish and shoyu (soy sauce). My oldest adds a bit of chili sauce too. If you are familiar with Chinese jook or congee, this is very similar.<br />

It just occurred to me that I cooked almost every day this week and didn't take a single picture.<br />

I normally don't cook that often but I think between being starved (no food for almost 42 hours) and then having to endure hospital food, I really needed something good. <br />

Hospital food is usually sub par anyway but what I was <strike>subjected to</strike> served was even below that. I've single-handedly fed 70 people three meals a day for three days working out of a kitchen with two burners and a half size oven. It's not hard, nor expensive to make food taste at least decent. Seasoning would help. That said, I'd like to share with you some of my favorite seasonings.<br />

I love this dessert (but then again I love most desserts!) but this one is wonderful for the warm summer days coming up. It's cold and refreshing, easy to make and everyone will love the pretty colors running thru the slices.<br />
<br />
<b>Jello Poke Cake</b><br />

2 - 4oz boxes of Jello (any flavor, but reds, greens, & blues look the best)<br />
1 - Tub of Cool Whip Topping<br />
1 - Box of Vanilla Pudding Mix<br />
*Plus whatever your cake mix box calls for to make it!*<br />
<br />
Bake your cake according to the box instructions.<br />
***If you're planning on turning over the cake out of it's pan, be sure to oil & flour the pan first!***<br />
You can make it in 8 or 9in. round pans, a 13x9 rectangle, cupcakes, anything you'd like.<br />
Once cake is finished, let it cool for 10-20minutes in the pan it was baked in.<br />
While the cake is cooling, mix up the Jello according to the instructions on the box.<br />
After the cake has cooled down a bit, poke holes all over cake using a fork. Pour the jello over the cake letting it fill in the holes.<br />
Cover the cake and place in the fridge for 2 hours to let the Jello set.<br />
If you'd like, you can overturn the cake out of it's pan now.<br />
Before serving, mix the pudding mix in with the tub of Cool Whip and frost the cake. I used a frosting piping bag with a star point to make it pretty but you can just spread it on like frosting.<br />

And that's it! Simple as that. We used lemon jello which tasted great but didn't give it the fancy streaks thru the cake like a brighter color will. </tbody></table>Today I'll post the recipe for the Crab Stuffed Mushrooms.<br />
Ingredients:<br />
12 mushrooms, medium sized (if they're too small you don't get much filling in them)<br />
1 can of crab meat (or fresh if you want to splurge, the can I used was the size of a tuna can)<br />
3/4 of a block of cream cheese, softened<br />
2-3 green onion stalks, chopped<br />
1/2 cup grated cheese (we like cheddar)<br />
salt & pepper to taste<br />

Turn on your broiler to high, make sure your rack is set on the upper half of your oven.<br />
Pop all the stems out of the mushrooms and dice half the stems into little pieces and place in a bowl.<br />

</tbody></table>Drain your crabmeat and toss that into the bowl with the stems and add the cream cheese. Salt & pepper to taste. Mix well.<br />
Using a small spoon, spoon in the filling into the mushroom tops, try and fill in under the edges of the mushroom cap and then put a decent size mound of filling on top.<br />
Place mushrooms on a baking sheet and place under the broiler for 3minutes, until mushrooms start getting a bit wrinkled and the filling browns slightly, don't let it burn!<br />
Remove the pan and place a small pile of grated cheese on each mushroom and return to the broiler until cheese is melted and bubbly.<br />
Once out of the broiler, top with the chopped green onions and serve!<br />
Be careful as the filling will be very hot and tends to gush out a bit when you bite into them.<br />

I cook way more when the kids are here. Looking back on this week, it's evident. Now they are gone, my food today consisted of a Lean Pocket and a salad thrown together of bits and pieces from the fridge. Not very exciting or blog worthy, unless you factor in the chance I have a chance to whine about it.<br />

</div><div>For their last night here, I wanted to do something special. We were going to buy a cake or pie from the grocery store but it seemed they were choosing one just to have one. Then I had an idea. The boys loved the crepes we had at the restaurant for Easter brunch. I had made crepes before so I knew they weren't that hard. I remember there was quite a bit of butter in the recipe that I used. I went looking for a fat free version and found quite a few. </div><div><br />
</div><div>Crepe batter is simple anyway. Most call for butter, flour, salt, milk and eggs. All the recipes I was looking at nixed the butter. I narrowed it down to two of them. The major difference is that one used whole eggs (so not fat free but lower in fat) and one used just the whites. I opted for the whole eggs. I felt it would make a slightly richer crepe.
